Chocolate Chip Mocha Cookies

Only four more weeks until Christmas means it is officially cookie season! Among gift shopping and tree decorating, we must not forget the very important task of baking holiday cookies. Nothing quite captures the holiday spirit like a tin of assorted homemade sweets, made with love and delivered with warm hearts.

Which holiday cookies will make the cut this year? We are happy to give these Chocolate Chip Mocha Cookies a big stamp of approval. While the classics should still stand, these cookies would make a great addition to any sweet assortment. Rich chocolate flavor combines with bold coffee notes, (courtesy of our Civilized Coffee Espresso Powder,) to create a balanced and not-overly-sweet treat.

As a bonus, we are positive that cookies with coffee in them are acceptable to eat first thing in the morning!

Chocolate Chip Mocha Cookies

YIELD: 20 - 24 cookies | PREP TIME: 15 min. |

COOK TIME: 10 min. | TOTAL TIME: 25 min.

INGREDIENTS

  • 4 tablespoons Civilized Coffee Espresso Powder

  • 1 and 3/4 cups all-purpose flour

  • 1/4 cup unsweetened cocoa powder

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 2 teaspoons cornstarch

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, melted

  • 1/2 cup granulated sugar

  • 1/4 cup light brown sugar

  • 1 large egg

  • 1 tablespoon hot water

  • 1 cup chocolate chips

RECIPE

  1. Line a cookie sheet with parchment paper and preheat the oven to 350 degrees F.

  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, cornstarch, salt and 2 tablespoons of Civilized Coffee Espresso Powder.

  3. In a separate bowl, mix the sugar and melted butter on a medium speed with an electric mixer until pale and combined. Add in the egg and mix well.

  4. Dissolve the remaining 2 tablespoons of Civilized Coffee Espresso Powder in 1 tablespoon of hot water, then add to the wet ingredients and mix well.

  5. Fold in the chocolate chips.

  6. Roll the dough into balls 1-2 inches in diameter. Place on the prepared cookie sheet and press extra chocolate chips into the tops of the cookies.

  7. Bake for 10-12 minutes and allow to cool on tray for 5-10 minutes before transferring to a cooling rack.
