Whether you’re a pumpkin spice fiend or just want to put a spin on your favorite breakfast, these pumpkin spice latte pancakes are for you. Classic autumnal flavors like pumpkin and cinnamon warm up a traditional pancake batter, and a sprinkling of instant espresso powder makes these taste distinctly like fall’s most popular latte. With a particularly light and fluffy batter, this recipe will particularly appeal to those that like thicker, melt-in your-mouth pancakes, and with no extra whipping required, we think that’s a great offer. Adding Espresso to Any Recipe

If you’re making a batter, chances are you can add instant espresso powder to it. We firmly believe that chocolate flavors are always made better with the addition of a teaspoon or two of espresso powder, making them stronger and richer. Spiced recipes, like this one, also benefit - warm flavors of cinnamon, vanilla, or nutmeg get even toastier with espresso.

For those that prefer savory dishes, espresso powder can still be your friend in the kitchen. Mix it up with some extra spices and garlic to make a dry rug (or, try out our own espresso chili rub) or add it to chili or soup for extra depth of flavor.

Ingredients

Makes 4 pancakes.

  • 3/4 cup flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 tbsp packed brown sugar

  • 1 tsp instant espresso powder

  • 2 tsp pumpkin pie spice

  • 1/2 cup milk

  • 1/2 cup pumpkin puree

  • 1 egg

  • 1/2 tsp vanilla extract

  • Butter or oil for the skillet

  • Your choice of toppings (we used walnuts!)

Directions

  1. Combine dry ingredients from flour through pie spice in a large bowl.

  2. In a separate bowl, mix milk and pumpkin. Whisk in eggs and vanilla.

  3. Combine wet and dry ingredients. Stir until just combined and no clumps of dry remain.

  4. Grease a large nonstick skillet with butter or oil. Heat over medium heat. Once hot, reduce heat to medium-low and pour pancake batter onto skillet.

  5. Cook for about 3 minutes or until bubbles begin to form, then flip and cook until both sides are golden.

  6. Repeat with remaining batter.
