Ingredients

  • 2 tbsp cornstarch

  • 2 tbsp sugar

  • 1 tsp ground cinnamon

  • Pinch of salt

  • 2 cups whole milk

  • 1 tbsp instant espresso

  • 1 tsp vanilla extract

  • Shaved dark chocolate, optional

  • Whipped cream, optional

Directions

  1. Mix cornstarch, sugar, cinnamon, and salt together in a 2-quart saucepan. Pour in milk gradually while whisking, ensuring the dry mixture is fully incorporated.

  2. Bring mixture to a boil over medium-high heat, whisking constantly, for about 5 minutes.

  3. Once mixture thickens, remove saucepan from heat. Add espresso powder and vanilla and whisk until smooth.

  4. Pour mixture into a bowl and cover with plastic wrap, allowing the wrap to rest on the surface of the mix to prevent a film from forming. Chill in fridge for at least 2 hours or up to two days.
