Espresso Banana Muffins
Thank you, daylight savings, for a particularly restful weekend. The extra ZZZ’s this Sunday have us full of energy to take on the holiday season. Espresso Banana Muffins

INGREDIENTS
1 1/2 cups all-purpose flour
4 teaspoons Civilized Coffee Espresso Powder
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter, melted
1/4 cup light brown sugar
1/3 cup sugar
1 large egg
1/4 cup milk
1 teaspoon vanilla extract
3/4 cup banana, mashed
3/4 cup semi-sweet chocolate chips
RECIPE
Line a 12-cup muffin tin with paper liners and preheat the oven to 375 degrees F.
In a medium bowl, whisk together the flour, Civilized Coffee Espresso Powder, baking powder, baking soda, and salt. Set aside.
In a large bowl, whisk together the melted butter, brown sugar, white sugar, and the egg until smooth. Add in the milk and vanilla and whisk until combined.
Mix the mashed banana into the wet ingredients. Then, fold in the dry ingredients until just combined. Add in the chocolate chips.
Fill each muffin cup about 3/4 of the way full and bake muffins for approximately 12 minutes, or until toothpick inserted into the middle comes out clean.
Remove from the oven. Let cool in the pan for 5 minutes, then transfer onto a cooling rack.
